Mashed potato – A Classic Dish with Twist

Potatoes are considered a “New World” food as it was introduced by Spanish explorer in the 16th century to the world.

If we look in the history, the cultivation of potato were done by the French people and they spread this vegetable throughout in Europe after some 150 years. As it’s was a new discovery for the world, many people were hesitant to consume Potato. But, in 18th century, an Army Pharmacist Antoine-Auguste Parmentier researched about this new vegetables and promoted it as a healthy food and cheaper option to meat.

Another reason why potato got popular fast was the economic crises which hit Europe in 1760s. People in France soon realized that potato can be easily cultivated and cooked in different manner but the most important point was the cheaper rate of this vegetable. The usability of potato spread so fast that in 18th century, many cookbooks introduced potato recipes. From soups, stew, to baked potato dishes, people all around the world start enjoying potato like never before. Today, we bake, fry or mash the potato and still relish its creamy taste.

Classic Mashed Potatoes

This classic recipe requires 2 pounds of Youkon gold potato in a pot with water and salt. Let the potato cook for 45 minutes in medium flame. Dain, peel and mash it in a bowl. Add 1 cup of hot milk, 1 stick of butter and mash until the mixture is smooth.

Chunky Red Potato Mash

For this you need 2 pounds whole red potatoes dipped in salted water in a pot for 40 minutes on medium flame. Drain the potatoes but do not peel as the skin gives the color and taste to the dish. Put 1 stick of butter and 3/4th cup of hot milk with some salt and pepper to enhance the taste.

Pepper-Swirl Mash

This is more of spicier version of mashed potato. If you are bored of eating a classic mashed potato, sauté some red bell peppers, 1 teaspoon of thyme leave in few drop of olive oil until everything is perfectly cooked. Puree the mixture and mix with the classic mash.

Tangy Mashed Potato

Make classic mashed potato as we stated above or use the red potato and put 1 cup of sour cream in the mixture. Garnish the dish with some fresh dill.

Low-Fat Mashed Potato

To those who feel mashed potato is diet killing food, then we got a healthier option for you. Take chunky red mash and put 1 cup of Greek yogurt and cooking water in it. This will make the dish more fluffy and creamy.

Orange-Fennel

One of the most innovative way to get your mashed potato more tasty is giving it a flavor of Orange. Take ½ cup of olive oil and mix with 1/2 orange grated zest, 1 tablespoon of fennel seeds and ½ teaspoon of pepper flakes. Drizzle this mixture on the classic mash of red potato if you are on diet.
